Belgian Singel – 5.1% ABV – 32 IBU
This beer orginally was developed out of a necessity to grow up enough yeast to be able to ferment out our Belgian Quadrupel. Fermenting out a 12%abv beer is very tricky, as alcohol is toxic to yeast as it is one of its waste products (lucky us, we have no way of synthesizing alcohol, so if yeast didn’t happen to make it for us, nobody in the history of the world would have ever gotten to try it). Anything stronger is usually distilled beer strength liquids. We, therefore, must make a light alcohol belgian beer first in order to make our yeast nice and strong so that it can ferment up to 12%abv. We use a good amount of locally grown unmalted wheat which provides a nice tart finish to this otherwise very dry beer. The end result is a very light easy drinking beer that still has the clove/banana character of a belgian beer.
