As a young shepherd, David famously vanquished the giant Goliath with a hand-crafted sling. Our modern anti-hero Bart Simpson clowns through childhood vrith a slingshot. Homer. Caesar. and Thucydides wrote of slings. The IRA. The Incas vs the Conquistadores. Native Americans and Palestinians have all wielded this iconic weapon of the underdog. A low-status tool, ancient slings were rarely preserved in the tombs of the wealthy. Michelangelo’s David embodied resistance and epic beauty in the Renaissance. Slingshots meant merry mischief to Dennis the Menace, Calvin, Woody Woodpecker and the Beverly Hillbillies. A musician and poet, the teenage David rescued his sheep from the mouth of lions. The first to unite the entire nation of Israel. the lineage of the Messiah descends from him. In Samuel 17, rising to the boasts of a mighty enemy, David refused the armor and weapons of the King. instead proclaiming victory. Not by my sword but by my Spirit” David in Hebrew means “Beloved”. I am approaching the age that my dad. David. died when I was a teenager. A lifelong Special Ed teacher and summer Army reservist. he served as both loving mentor and affable prankster a dedicated advocate for the underdog. In Alchemy, the Star of David equals a mystical union of male/female earth/sky leading to nirvana. The 6-pointed Brewers Star blends fire, water, malt, yeast, hops, and the character of the brewer. In the spirit of a slew of Dards & Slingshots. Shmaltz hoists our tribute to the glories of Summer… L’Chaim! Jeremy Cowan, proprietor
Death of a Contract BrewerHe'Brew

Black Ale

Death seems so obvious: the end of life, no mas, kaput. But Humans stand an optimistic animal. Many traditions suggest alternate endings: Resurrection, reincarnation, rebirth, afterlife. Even the atheist view of Eternal Oblivion doesn’t seem quite final, more of a shift in spiritual states of (un)consciousness. As usual, Jewish tradition prescribes… Food. 7 days of family, community, and bagels (beer!), called, Shiva, meaning “7” in Hebrew. The flip side to the 7 days of Creation with the 7th as a holy day of rest. The first meal of Shiva is “the comfort meal.” And the number 7 provides powerful mojo: 7 Jewish wedding blessings, 7 Liberal Arts, 7 Lucky Japanese gods, 7 stars of the Big Dipper, 7 colors of the rainbow, 7 seas, 007 license to kill, 7 dwarves, We are 7 by Wordsworth with a child’s view of death, 7 deadly sins, Best of 7 finals in NBA, NHL, MLB, 7th Inning stretch, #7 on Elway & Tiny Archibald. George Castanza yearned to name his firstborn, “7” as a living tribute to #7 Mickey Mantle. The 7 Award however must go to the immortal George Carlin for 7 Dirty Words, inspired by another hero Lenny Bruce. Coming into 17 years of beer, and Year #1 with our own Brewery, we commemorate this conversion with Death Of A Contract Brewer, our Shmaltz homage to new life – L’Chaim! Jeremy Cowan, proprietor

Abbey Dubbel

"Brewed with a combination of Abbey and Trappist Belgian ale yeast and European lager yeast, this ale-lager hybrid showcases qualities of two of our favorite traditional styles in the most untraditional way," says Shmaltz Brewmaster Paul McErlean. "The addition of California Merlot and Upstate NY Concord Grapes brings Shmaltz’s bi-coastal roots full circle and contributes a luscious complexity of vibrant flavors." The experimental process of brewing Rejewvenator® 2014 begins with 4 specialty malts and 4 hop varieties blending European tradition with brazenly innovative American craft beer flavor and attitude. Cold, bottom fermentation starts with the European Lager yeast, and once the beer warms, McErlean pitches the Abbey/Trappist Belgian Ale yeasts brought in exclusively for this brew. Finally the succulent juice of grapes is infused into the wort (beer) and ferments for several weeks before filtration and packaging. A delicious tribute to the original craft beer warriors, the Monks, and a fitting welcome to warmer days and the new life of Spring and Summer. Born in California now Reborn in New York - it’s a Rejewvenator 2014 - with grape! Concord & Merlot, East Coast West Coast mashup - everyone is a winner. Malts: 2-row, Munich, CaraVienna, Dark Crystal. Hops: Warrior, Cascade, Amarillo, Crystal, Goldings. California and New York Grape Juices.
