After the Equilibrista, our beer inspired by the Champagne world, here it is a new experiment on the “wine meets beer” theme. This time, though, we tipped the scales in favour of beer, adding to the Duchessa wort only a 25% of wine must: in this case we used Malvasia (coming from our friends of Tenuta di Bibbiano, as usual), a white, aromatic grape variety which gives the beer a gentle and nice sharpness and an inusual, fruity nose. The beer is bottle-fermentd using Champagne-yeasts, and it has a quite intense “perlage” (bubbles) that makes it perfect as an aperitif or even for the whole meal. The “chaotic” label was designed by Valentina De Luca, an Art student at the Istituto d’Istruzione Superiore Antonio Cederna of Velletri (Rome), who won our contest “Etichette Bizzarre”.

Beer brewed with spelled, traditionally grown in the Regional Park of the Monti della Duchessa. It looks golden with orange highlights, thinly veiled, and the foam is rich and creamy. The nose is very broad, fruity (banana, pineapple, tropical fruit) and floral, with a light and pleasant peppery. In the mouth the carbonation is fine, there is a slight acidity and the body is adequate. Hopping is moderate, the ending very pleasant, cool.

A beer extremely bizarre that comes with the ambition to be able to give great elegance and drinkability to a super IPA from 10% alcohol. Hops are dominant dall'ammostamento using it to dry hopping in a mixture of American and otherwise. The beer has a body important, but at the same time notes of citrus and resinous give it an extraordinary freshness. A bizarre not to be missed!

(Oyster Stout) Inspired by the Nordic tradition, is a stout impenetrable color to which we added during the boil with fresh oysters shell and all: to be precise, the precious Fin de Claire N2 from the coasts of Brittany (15 kg of oysters for 500 liters of must ). The nose has beautiful toasty and slightly savory, minerals, dates from the shell. The palate is soft and full, with a pleasant finish salty but not overly so given by the mollusk.

Amber colour with a small creamy foam. In the nose hoppy notes explode [reinforced by the use of dry-hopping]. Grapefruit, bitter orange, mandarin, resinous and spicy notes are perfectly married with caramel and honey notes coming from the malts. Initially very dry and hoppy-bitter on the palate, but after a few seconds all the fruity/estery notes are exploding in the mouth. Strong finish with distinct resinous peppery notes.

Rubus Lamboni is a sour ale made with rasperry infusion. The raspberries used for this unique ale are from the Sudtirol Alps in the northern part of Italy. Made with pilsner malt, caramalt, and wheat malt, this beer pours a clearish gold with pink throughout. The head is white with very nice retention and lacing. The aroma and taste contain influences from raspberry juice, tea, spices and a mild strain of wild yeast. Considerable carbonation, light and easy to drink.
