What better way to celebrate the summer and Belgian Independence Day than with a Saison? Our Spiced Saison is a toast to the great brewers of Belgium and the proud history, which they represent. We have used a Wallonia Saison strain of yeast that produces fruity esters and classic earthy notes in the beer. Lemon peel, white pepper, coriander along with grains of paradise are used to give the Saison a delicate yet satisfactory spicing.

Belgian White or Wit beers area a traditional classic of Belgium. This iconic style was once almost completely forgotten until brewer Pierre Celis revitalized the style in the mid-1960s. Traditionally brewed with a moderate ABV and spiced with coriander, we have decided to put a twist on a classic for this special occasion. Hazy, golden-yellow hue supports a rocky white head. Aroma offers balanced fruitiness and notes of clove with a backbone of pale malts. Body is enhanced by elevated ABV and raw and unmalted wheat, yet the beer remains light on the tongue. Taste is pleasantly sweet and refreshing with spicy yeast character and silky mouthfeel. Finish is crisp and slightly tart with lingering notes of spice. Brewed for Belgian Independence Day on July 21. Available for a limited time in 1/6 BBL.

In Greek mythology, Aphrodite rises from the foam of the waves of the sea, enchanting all who see her, and inciting thoughts of love and lust wherever she goes. We could hardly say it more eloquently. Our Limited Edition Aphrodite Ale is ethereal, intriguing and mysterious – as the Goddess Aphrodite must have been. Aphrodite has champagne-like carbonation, much as the foam of the waves of the sea. Plus enchanting flavors with whispers of raspberry and pear, and hints of funk and tartness created by the Brett yeast. The refreshing dryness comes from the unusual combination of Ommegang and Brett yeasts, and incites feelings of love, though we don't know about lust. Grains of paradise are infused into the nectar, and when poured Aphrodite is crowned with a luxuriously shimmering rose-pink head.

Ommegang Biere de Mars is a Belgian-style dry hopped amber ale with a bit of magical space dust woven in Brettanomyces bruxellensis, a wild-yeast used in the secondary fermentation. The Brett imparts added tartness, a bit of zing and some farmhouse funkiness. Biere de Mars reveals a copper-amber body and a frothy white head that builds, clings and stays. Aromas are of malt and grain, clove, fruit and a bit of funk. Flavors are full-bodied with delicate malty sweetness, followed by spicy, peppery yeastiness and Brett-induced funk. Hopping is subtly bitter and aromatic, bumped up a bit by dry hopping. The finish is dry and gently lingering. At 6.5% ABV; it also pairs nicely with spicy foods such as barbecue.

Duvel Rustica Golden Ale is our long-anticipated collaboration with Duvel. It's our first Belgian-style Golden Ale, a elegant ale noted for using simple ingredients to create complex flavors and aromas. We worked closely with Duvel on the recipe and processes, yet added our own signature notes. This Duvel collaboration created a fine ale, one with all the depth and breadth of Duvel's classic Belgian Golden Ale, along with rustic notes, including fruity esters from our yeast. In keeping with our rustic farmstead roots, Rustica pours a golden hue, the aroma and flavor mixes maltiness and citrus from hops while the yeast produces notable fruitiness. The body is lean and rounded, while the finish offers dry warmth & firm hop bitterness.

Fleur de Houblon is a rich gold color with distinct floral hops in the aroma that follow through in the taste. Whole-cone Bravo hops are used to impart their earthy, fruity, and floral aromas and flavors. Wildflower honey added during fermentation provides light sweetness to the beer, which finishes dry and with firm hop bitterness. Take the Black Stout is named for the oath taken by those who stand the Night’s Watch at the Wall, defending Westeros against northern. Take the Black Stout is a 7% beer, brewed with base, caramel, chocolate and roasted barley malts. Hopping includes Northern Brewer and Columbus; spices are licorice root and star anise. Hue is black with full tan head. Aromas include chocolate, caramel, and earthy hops, light roastiness, a touch of fruitiness. Tastes include chocolate, coffee, rich malts, and balanced roastiness. Three Philosophers is a remarkable limited edition strong ale brewed by Brewery Ommegang in response to a home brewer’s description of his dream beer. Realbeer.com, the internet’s largest beer website, hosted a contest called “Create a Great Beer.” Brewery Ommegang was chosen by Realbeer.com to brew the Belgian-style ale for the winning essayist. Noel Blake, a home brewer from Portland wrote the winning description for what his “dream beer” would be like.

Ommegang's brewers spent several years refining their ideas of what a "perfect" tripel would be. In the original style, a Belgian tripel is a golden ale, from 8.5% to 10% ABV, with fruity flavors and aromas coming from the yeast. Tripels are simply brewed, but with great attention to detail. Ommegang Tripel Perfection goes beyond the exquisite attention to detail and adds spices to subtly enhance aromas and flavors. The result is a fine ale honoring Belgian brewing tradition, while also expanding on it in the new Ommegang tradition.

In the world of Westeros, Valar Morghulis means “all men must die.” Fans of the hit HBO show chose the foreboding phrase as the name of the newest beer in the Game of Thrones® collaboration between HBO and Brewery Ommegang. As part of a Facebook poll, fan voting determined the style and name of the next beer. An Abbey Dubbel was selected and it is perfectly represented by the “two- headed” coin given to Arya Stark by Jaqen H’ghar, one of the “Faceless Men of Braavos” – legendary assassins with the ability to change their appearances at will.

Wild At Heart is an audacious new ale in our brewer’s obsession series. In a rarely-employed technique we use only wild brettanomyces yeast in primary fermentation – the very heart of the beer. The brett yeast imparts robust fruit flavors and aromas, and combines with Motueka and topaz hops to create uncommon tastes and aromas, Wild at Heart pours a rich amber hue with a full white head. Aromas include mango, pineapple, and passion fruit. Complex flavors present a touch of tartness, carefully balanced with gentle malt sweetness and subtle hop bitterness. For enhanced tartness, simply let the beer age.

Ommegang XV pays homage to the great Trappist ales brewed by monks in the Trappist monasteries of Belgium. Created with deep devotion to the brewing art, using the finest ingredients and made with infinite care, XV is unlike any ale we've ever brewed. Even by our exacting standards Ommegang XV stand alone. Ommegang XV pours a deep walnut hue, with a ruby highlight, full head, and lively carbonation. The nose is malty and complex. Flavors of toffee and chocolate arise, mingling with molasses and caramel as the ale warms. Fruity esters and hints of raisin follow. The body is full and finishes with creamy smoothness.

A beautifully made, carefully blended, and well-aged sour beer, (it is aged on cherries) made in collaboration with Brouwerij Liefmans of Belgium. Ommegang brewmaster Phil Leinhart went to the Liefmans brewery in Oudenaarde, Belgium, and worked side by side with their master blender to create a distinctive beer unlike any other. Complex, lightly malty, tart, ruby color, with just a touch of hops. (Zuur means "sour "in Dutch).
