Over the ages the term ’cellar door’ has numerously been referred to as the most beautiful term in the English language. Upon setting out to create the first summer addition to the Stateside line up of ales; the feeling that almost instantly came to me was that of beauty & cleansing. Many summer offerings tend to lack the complexity of their bigger, colder season counterparts; so my goal was to craft an ale of extreme balance with a delicate complexity that allows for contemplation while also providing quaffable refreshment. Starting with a base of German wheat & pale malts this crisp slightly hazy foundation was then accented with a blend of Sterling & Citra hops providing a intricate blend of herbal grass & tangerine citrus flavors and aroma. To pull this all together and to complete the ’cleansing’ aspect of my vision i gently finished the ale off with a touch of white sage, lending a mild earthy spice character to the blend. of course let’s not forget our house saison yeast that brought all the elements together leaving a dry yet intricate finish. The Stillwater Sensory Series is a collaboration between Stillwater Artisanal and singular musical artists. In this first collaboration, Stillwater works with Lower Dens to make an ale based on an interpretation of their song, "In the End is the Beginning." On the bottle itself, a QR code will link to an exclusive Lower Dens performance of the song. Mono is an evolution of the ’single hop’ phenomenon. While Galaxy is the stated hop on the label, the true concept here is to display the headliner in it’s greatest form possible, and if you ask me every hop is better when paired or supported by others. So we added some accents of Centennial & Sterling to widen the frequency and crank up the volume of bright tangerine, grapefruit, and fresh grass.

This Imperial Rice IPA projects an array of multidimensional hop flavor and aroma. Simcoe offers piney fruit while Centennial delivers a squeeze of lemon atop bright the tangerine citrus of Galaxy, laid upon a field of grassy Sterling.. and then some hippie comes by with a dank bag of Columbus.. This heady combination is backed by an extremely lean malt body thanks to the addition of flaked rice. Label Design Notes: The layout of the label reinforces the absurdity by recalling both early promotional materials from Braun and Alfred Stieglitz’s photo of Marcel Duchamp’s "Fountain".

Stillwater IPA? WTF, right? Well truth be told we love a good IPA just as much as the next guy and besides, whats more contemporary then a American IPA? The lean base of Pilsner malt with the lightest touch of caramel support this high definition blend of 5 different hops gathered from all over the world. Bright citrus, stone fruit, pine, earth, dank, and crisp.

Tropic-Farmhouse IPA

Oak smoked imperial wheat stout> Like a sound system that fills the room with audibles swarming in every direction. This massive stout overtakes your senses with flavor & aromas of dark chocolate, molasses, roast, smoke, earth & wood, It’s heavy I know, but you have to drop that bass every once in a while if you really wanna get down.

So for designing my table beer I had to balance all my imbibing desires into a product that would always quench my thirst. I compiled some of my favorite attributes into a format that would be pleasing on any day or time. Low abv, dry finish with a light funky yeast esters that are accented with a abundance of earthy & fruity hops. Balance is always the goal, but for this I also wanted extreme quaff-ability, refreshment, and subtle complexity.. Classic? perhaps.

Bonnie Stillwatter is a conceptual collaboration of artistry and friendship between Will Oldham (aka Bonnie ’Prince’ Billy), experimental rock group Watter (featuring a member of Grails), and Stillwater Artisanal, a nomadic brewer that mixes equal parts art and alcohol. This collaboration is an inspired one, the roots of which are a mutual respect and love, and the fruits of which are two side-long trips into dark cinematic folk-rock determined to find the light at the end of the tunnel. "The Devil Is People" begins not unlike the east-meets-west melancholy of Watter and Grails. Oldham’s penchant for weaving singer with song is particularly resonant here; his first- person storytelling has an uncanny way of sounding communal – almost hymnal – when wrapped in ever-unfolding layers of warm sound. On the b-side, mercurial multi-instrumentalist/producer Bundy K. Brown (Tortoise, Gastr del Sol) explodes "The Devil Is People", rearranging and reinterpreting its multitude of instruments and voices into something more sinister – less a remix, more like a vital new limb growing from the belly of the beast.

What is with the paradoxical term ’Black IPA’ anyway? Whatever it is, we do love black beers.. also smoked beers, and of course everyone loves hops these daze.. A complex blend various smoked, caramel and subdued roasted malts lay the base for a combination of piney, dank and (dark) fruity hops.. While there is a lot to contemplate with this beast, just be sure to enjoy it without getting too sucked into its enigmatic composition. For the first edition of the Stillwater Import Series I traveled to the village of Beerzel, located in the Antwerp province of Belgium. Here I teamed up with brewmaster Jef Goetelen to craft an authentic Belgian version of my liquid interpretation of the Spring season. A recipe originally contrived a few years prior as a collaboration brew with my good friend Paul Kretzer. The base is German barley & wheat, with a touch of Belgian aromatic; accented with grassy hops and an array of spring botanicals (heather, chamomile, lavender, & dandelion). Like a fresh meadow in spring. (now currently brewed at Two Roads in CT)
