Deep ebony colour. At the nose vanilla, wood and peat with toasted notes and cocoa. In the mouth it is soft, sumptuous and balanced with hints of cocoa and barrel aging.

A blend of New Morning and 18 month aged 3 Fonteinen Lambic refined for at least 12 months in bottle. It has a surprisingly citrus nose of leather, cellar and animal with hints of dried flowers and honey. Lasting and sapid in the mouth with a sour finish that always makes the lovers of this blend smile. This beer could very well make you develop an addiction for spontaneous fermentation and turn your entire world upside down! After a mechanical breakdown, 3 Fonteinen Brewery of Beersel (possibly the best Lambic blender in the world) had economic damage in the summer of 2009. The news caused such a stir in the International beer movement that I called Armand to know how things were. As he needed to sell his Lambic, I immediately got inspired to blend our New Morning with his beer. We selected three 18 month old Lambic barrels that we siphoned in a small tank on our truck. The journey back was long and hard, myself and Manuel took turns driving through Belgium, France and Italy only stopping for gas. After days hand bottling and months of maturation, the outcome has gone over and beyond our expectations and we can say with pride that it was worth it!

Blend of 1/3 Ale Aged in Whiskey Barrels, 1/3 Ale Brewed w/ Brettanomyces & 1/3 Young Peat-Smoked Ale

Sour beer soaked with raspberry.

Sour beer inoculated with Lactobacillus blended with a Gose brewed with Himalayan pink salt and aged for 9 months.

A Barley Wine aged 18 months in French oak wine barrels previously used for Amarone della Valpolicella wine.

Blend of Krisopolis (a new beer, that will be available in the future, fermented in barrels for 2 years, then Morello cherries are added to it), with a part of Ultima Luna (Barley Wine matured in Amarone barrels, with Marasca Morello cherries) and a part of young beer. A special one time creation that truly lives up to its name. The base is a Stout brewed with hot chili peppers that has been aged for almost 2 yeasr with blueberries & pediococcus. It is opaque black in color in with just a touch of carbonation. Quite acidic & tart along with very intense flavors and aromas. This nightmare is sure to leave a lasting memory.

Dedicated to the beauty of a new spring morning with the first sun rays warming the blossoming flowers. Nuova Mattina pours a hazy orange color with a scent reminiscent of field flowers. A complex, intriguing, voluptuous and thirst quenching ale, a hopeful hymn to the day that lies ahead. Brewed with ginger, coriander, green pepper and chamomile.

Imperial Russian Stout with hot peppers.Winner of the best beer at BRAU Beviale 2008, a quaffable Imperial Stout with a medium body and a good lingering finish. Liquorice and nutty in character, the dark malt profile is shown also by the cappuccinolike foam.
