Cuvée des Trolls was born in 2000 in the vats of the “Le Brasse-Temps” micro-brewery created by the Brasserie Dubuisson in Louvain-La-Neuve. It is an unfiltered and therefore naturally cloudy blonde beer. Brewed exclusively from malt, hops, sugar and water, it has an alcohol volume of 7%. The use of dried orange peel during the boiling gives it the most pleasant fruity aroma, which is in the best possible harmony with a flavour that is full of roundness and finesse. The Cuvée des Trolls, a surprisingly pleasant beer.

Created in 1933 under the “Bush Beer” trademark, it is one of the oldest special Belgian beers and the flagship of the Brasserie Dubuisson. Scaldis Ambrée is a filtered, high fermentation beer. It is exclusively made from malt, hops, natural sugar, water drawn from the brewery’s basement and exclusive yeast jealously preserved for 65 years. The use of caramel malt, the know-how and the patience of the master brewer (4 to 6 weeks storage) give it, in addition to its characteristic amber colour, a particularly well brought-out bitter-sweet flavour and a smooth consistency. The high density of the wort combined with the valiant work of the company’s own yeasts give it an alcohol content of 12%, making it the strongest Belgian beer. Scaldis Prestige starts out as Scaldis Ambrée, which instead of being stored as traditionally in stainless steel vats is matured in oak barrels for a period of six months. During bottling, a small quantity of sugar and yeast is added to the beer, which, placed in a hot room, causes refermentation in the bottle that gives it a natural cloudiness and a particularly high alcohol content of 13%. The old-style maturation, in oak barrels, enables the drinker to fine aromas and tannins absent in beers for decades that will delight the most demanding palates. Aromas are found in it that are close to whiskies and brandies matured in oak barrels but in a package of exceptional roundness. The powerful flavour, the rich aromas, the exclusive bottle and a limited distribution make Scaldis Prestige an exceptional beer.

SCALDIS DE NUITS (13%): Bush de Nuits was launched in 2008. In this case Scaldis de Noël is allowed to mature for 6 to 9 months in wooden vats that once contained Bourgogne de Nuits St Georges wine. The beer is then bottled in a 75 cl bottle and placed in a hot room for a third refermentation. The final result is altogether surprising, a light-coloured authentic beer with character, which gives off particularly subtle wine-like aromas and offers a mouthful approaching that off wine... An essential discovery to make in the near future

Scaldis de Noël Premium is a traditional Scaldis de Noël which has undergone refermentation in a 75 cl bottle in a heated room for 3 weeks. That being the case, it not only has the luxurious qualities of traditional Scaldis de Noël - coppery colour, rich and powerful and yet balanced aromas – but also, due to its refermentation in the bottle, Scaldis de Noël Premium develops strong flavours and a slightly higher alcohol content (13% alc.vol). Brewed in a limited quantity, Scaldis de Noël Premium is an indispensable reference among the end of year beers.
