We soured the wort on the Hot Side with Lactobacillus for a few days and then brewed up this smooth and hoppy sour. It tastes like a big bowl of fruity candy or some chewable flavored vitamins, but what’s the difference? It’s sweet, tart, and sassy, just like the tasty cherry pie that your favorite aunt makes. For all the Aunt Sally’s out there, You know who you are... You remember it like it was yesterday. The beer flowed like music. The music was all that mattered. What mattered most was that nothing else mattered at all and the world outside fell away as a dream disappears upon waking, ephemeral and vaporous. You cradled her in your hand, lips trembling, her citrus suchness a swarm of expectation in your mind, her carbonate beauty as satisfying as it was overwhelming. You were new to this dance but she was not. Taking her in completely she seized your senses and you were consumed by the luminous passion, her residual sweetness, and the tart earthiness of her grin... Variation #4 - Dry hopped with Nelson Savign and mosaic that were vaporized through Chris Myers volcano. This is Couch Trippin’ Fusion #19. Where music meets craft beer. This a new spin on a beer collaboration. The brew day was full of some pretty amazing up and coming bands and a few beer writers. We brewed a “mother beer” or base beer that will be blended into various barrels. Mother beer is an amber beer week dry hopped with Nelson Savin and Mosaic hops. In true California fashion, we vaporized various hops to get a feel for which hops nuanced the beer the best. You literally inhale (a bit like you would something else!) the aromas from the bag. Trust me, you’ll know hops after this.

There are two kinds. There is the DayTime kind, which is bright and welcoming and then there is the NightTime kind, which should never be confused with the DayTime. NightTime is dark and deep and may take you to unexpected places, places that the DayTime cannot. But then, the NightTime is not suited for ordinary life and ordinary tasks. In fact, NightTime may be the answer for that sort of thing, meaning that those sorts of things may never get done. Things take time in the NightTime, things slow down and you can puase (you have to, actually) and investigate carefully to find that level of objective detachment that is only possible under the spell of the NightTime. Seek the Day, but fear not the Night.

In The beginning, there were ales. As far as anyone knows, the first beers made were ’top-fermented’, which is longhand for ’Ale’. Sometime long before the 1860’s, beers became popular that were made in Northern Europe with a bottom fermenting yeast strain that liked the colder temperatures. Because they had to spend weeks aging before they tasted their best, they were known as ’Lager’ beer. Lager is the German word for ’storage’. Since they had to sit a while, they took up more time and space and as such were harder and more expensive to make. Where ales are meaty, lagers are sinewy. Where ales are street, lagers are ’haute couture’. Where an ale might hit you over the head and take your wallet, lagers donate to charity and adopt stray cats. While an ale might steal your car or try to date your daughter and keep her out all night for who-knows-what purpose, a well bred lager would offer to clean your house while you’re on vacation and leave fresh scones and coffee for you when you return. Now, don’t get us wrong, ales can be a lot of fun to hang out with when you’re in the right mood, and if you have bail money on you. But what’s wrong with livin’ uptown from time to time, on a nice street, where the doormen all wear those little uniforms, the air smells of flowers, and lagers rule the Earth. Cheers!

This sad holiday season we didn’t have the brewing capacity to make our favorite seasonal brew, the widely feared BrownShugga’ Ale. You see we had a couple of really good years (thank you very much) and so heading into this season while we are awaiting the January delivery of a new brewhouse we are jammin’ along brewing 80 barrels of IPA and PILS and such every 3 hours. A couple of months back we realized that since we can only brew a mere 60 barrels of Shugga’ every 5 hours, that we were seriously screwed. For every case of Shugga’ brewed, we’d short 3 cases of our favorite daily beers. It’s a drag. This year, we brewed something that we think is also cool and brews more like our daily brews. The new brewhouse will help insure this kind of failure never happens again. It’s a mess that we can not brew our BrownShugga’ this year and we suck for not doing it. There is nothing cool about screwing this up this badly and we know it. Maybe we can sue our own sorry selves. There is no joy in our hearts this holiday and the best we can hope for is a quick and merciful end. F*@& us. This totally blows. Whatever. We freaking munch moldy donkey butt and we just want it to be all over... So this substitute beer is a ‘Cereal Medley’ of Barley, Rye, Wheat, and Oats…. Full of complexishness from the 4 grains, and weighing in at 7.85% abv, Then joyously dry-hopped for that big aroma and resinous hop flavor.
