Ambershock® is an amber beer produced by way of infusion, with 7.0% alcohol by volume (17.7 Plato degrees). The wort boiling phase is prolonged in this case to obtain a certain caramelizing of the sugars in the wort. Strong, full-bodied and mellow, its marked yet well-balanced malt flavor mainly derives from a special bottle-conditioning process that lasts for approximately 4 weeks. Bear in mind that this is not a refermentation phase caused by adjunct sugar or wort, which happens with Trappist beers. It is an exclusive procedure adopted by Birrificio Italiano® of Lurago Marinone. That is why Ambershock® is only sold in bottles. If it were matured in vats and served on tap, it would have a completely different taste. Bottle conditioning also brings about perfect settling of the yeast, which makes it possible to have a perfectly limpid beer with a strong, bright amber color.

Brewed by way of single step infusion. Bottom fermenting yeast is added to induce fermentation at 10°C (48°F). When attenuation reaches 50 %, it is blended with a combination of old and young sour beer that were fermented with lactic acid bacteria, wild yeast and black sweet cherries. The fermentation continues and the natural sugars from the malt and cherries are converted to alcohol. At the end of primay fermentation, fresh beer wort and top fermenting Saccharomyces Cerevisiae yeast are added. The beer is then bottled and sent to refermentation in a cold room at around 7°C (42°F). The refermentation lasts about 4 months. Editor’s note: Alcohol content varies from batch to batch, and has ranged from 6% up to the 7.5% of the most recent batch.

Tipopils® is a light beer produced by way of infusion, with approximately 5.2% alcohol by volume (15.8 Plato degrees). It has a rather dry, hoppy flavor. After a rather long primary fermentation, it undergoes a short maturation phase of about 2 weeks.
