In that time the reputation of his artistic delicacies has spread around the globe. Elbow’s sweets are distinguished by their use of unusual and sometimes surprising flavors and ingredients; in that adventurous spirit we joined forces to bring you a very special Chocolate Ale.
In developing this beer, Elbow and Boulevard brewmaster Steven Pauwels sought to harmonize the interplay of chocolate and malt, with each supporting and enhancing, but not overwhelming, the other. Just the right chocolate was essential. Elbow recommended a rare variety from the Dominican Republic, prized for its robust flavor and aroma, and a personal favorite. More than a mere flavoring, the chocolate — in the form of nibs, or crushed, roasted beans – was incorporated into the brewing process itself. |

To emphasize the individual characteristics of Boulevard and Ommegang, two batches of beer were brewed, and each was fermented with the unique house yeast from our respective breweries. The batches were then blended post-fermentation, allowing both of the distinctive yeast signatures to manifest in the finished beer.

Huge late hopping with a blend of Mosaic, Citra, Lemondrop and Azacca lends bright flavors of mango, pear, blueberry and citrus to a pale ale featuring slightly toasted biscuit and caramel/toffee notes. Infused with freshly sliced grapefruit at the conclusion of the boil, our tropical pale ale is briefly aged on passion fruit and grapefruit at the end of fermentation resulting in a refreshing acidity and tropical fruit flavor and aroma. At 7.3 ABV and 55 IBUs, Collaboration No. 5 – Tropical Pale Ale finishes slightly tart with bright citrus character from dry-hopping with Lemondrop, Azacca and Pacific Jade hops. |

Wheat wines are a somewhat recent stylistic development, akin to barleywines in strength, but brewed with a large portion of wheat malt, which provides a soft mouthfeel to balance the big body of these warming brews. We add a generous helping of Hallertau and Citra hops, and age the beer on both French and American oak, resulting in a beer that opens up with a warming burst of tropical fruit flavors, adding subtle Sauvignon Blanc notes before rounding slowly to a dry, oaky finish. | Imperial Stout with Coconut | | Boulevard Kansas City, MO | Imperial Stout 11% ABV | Using the base beer for Imperial Stout as a starting point, our brewers suspended just over 2 pounds per barrel of raw and toasted coconut flakes in porous bags in one of our stainless steel fermentation vessels. Finished, cooled beer was then transferred onto the flakes and allowed to rest for 48 hours to infuse the aroma and flavor of the coconut into the base beer. The resulting beer is a marriage of huge, round, chocolate and caramel notes from Imperial Stout, with smooth layers of sweet, toasted coconut notes. |

Version 2.0 has upgraded its spicy aroma, with hints of bubblegum and clove. Bold flavors will launch upon uncorking, as sage and lemongrass balance the tangy, zesty wheat malt profile. Rather than merely blending a wittier with an IPA, Reboot harmonizes distinctly fruity Belgian yeast overtones with big, fruity American hop notes by creating an herbal bridge between these two somewhat contradictory flavors. The beer’s complexity os supported by a spritzy effervescence, finishing dry, with lingering hop notes. |

Up front, Pilsner malt makes a clear yet restrained statement, answered by the steady, harmonious hum of Saaz hops, traces of which linger in the dry, crisp finish. Rock on. |
| Rye on Rye | | Boulevard Kansas City, MO | Rye 12% ABV | Why Rye? A fair question, given this assertively flavored grain is more often associated with whiskey than with beer. Even in that arena, it has largely been eclipsed by corn and barley, the sources of bourbon and scotch, respectively. But when we procured some seasoned rye whiskey barrels from our friends at Templeton Rye, we asked ourselves, "Why not?" Why not brew a rich, tawny rye ale, then mellow it in the warmth of charred oak rye whiskey casks? Thus, Rye-on-Rye: a marriage of very similar, yet very different embodiments of this unique, distinctive grain. Two kinds of malted rye provide a spicy sweetness, giving way to notes of caramelized wood and the citrusy tang of Perle, Magnum and Saphir hops before easing into a dry, lingering finish. Rye-on-Rye’s body and character make it the equal to any sort of hearty stew or aged cheese. At the risk of seeming redundant, might we suggest pairing it with a classic pastrami-on rye? A rye beer with a hint of rye whiskey aroma, alongside a rye bread sandwich. Why not? |

Beginning with Sierra Nevada’s estate-grown pale malt, and combined with amber malt, wheat, and malted wheat, it is then assertively hopped with Bravo and Styrian Goldings, dry-hopped with East Kent Goldings, and finally barrel aged with Brettanomyces in Missouri oak.
