"2 varieties of hops & 3 types of malts" Milk stout, also called ‘cream’ or ‘sweet’ stout, is a stout containing lactose, a sugar derived from milk. Because lactose is unfermentable by beer yeast, it adds sweetness and body to the finished beer. Milk stouts have been claimed to be nutritious, and were marketed as such in the early 1900s with claims that would make the FDA wince. One ad read, “Ideal for nursing mothers, for the healthy, for the invalid, and for the worker.” Surely! Of course, we couldn’t stop at a traditional milk stout. Ours is a double, an addition to our 2X line, and at 7.5% abv is every bit as delicious as it sounds. To your health!

One type of hop...one type of malt.

Espresso is a drink that is not for the faint of heart. Pulling a perfect shot is as much a science as it is an art form. Come to think of it, the same can be said for brewing beer. Of course, both coffee and beer have certain, shall we say ‘uplifting’ qualities. Combine the two is a natural progression. Our 2xStout is considered by many to be a perfect milk stout. We started with that in mind, and added espresso beans and lemon peels for a true Italian style pick-me-up. The result is a stout so black, so rich, so creamy, it’d be at home in a café along a cobblestone street in some neighborhood in Rome. Yet, it’s beer.

What is rye? Rye is a cereal grain historically grown in our region. It has been cultivated since the time of the early settlers due to the scrappy and hearty ability to withstand harsh climates and poor growing conditions. Did you know George Washington grew rye and used it to ferment whiskey? Were pretty sure that is a fact. You will notice the distinct notes of rye, a slightly spicy and grainy aroma not lost in the shuffle of hops and the four other malted grains we use in this fine seasonal addition to our 2X line.

A Double India Pale Ale with spicy citrus aromas and stone fruit flavors. These flavors, with the addition of lightly roasted malts and brilliant hop bitterness, make 2XTangier a beverage as refreshing as it is exotic. 2XTangier is brewed as a stronger, bolder ale than its older brother, Tangier. It shares the same synergy between tangerine peel and spicy, citrusy, Mosaic hops. Enjoy 2XTangier in celebration of your epic adventure.

This high-gravity Wheat Ale is brewed with blood orange juice, grapefruit & tangerine peels. This special ale is brewed with 35% Wheat & 3 types of hops. We made this one obviously refreshing. It features Tropical citrus and grapefruit aromas from Mosaic hops along with the addition of over 4 & a half pounds per barrel of grapefruit & tangerine peels. And to get extra juicy, we ferment with blood orange juice concentrate. Not overly bitter, this brew sits around 30 IBU and its nice citrus pith rounds out the bitterness. Residual sweetness helps accentuate the fruity character and masks the 8.5% ABV well. Enjoy straight up or served on the rocks with soda & wedge of fresh fruit. Long ago, British farmhouse brewers made special ales using the first runnings of the mash. These beers, now called barley wine, are brewed in the tradition of days past. At Southern Tier this long awaited brew is placed on the back burner until the start of the new year. Back Burner Barley Wine is a celebration of things to come and things remembered. It’s conceived in three small batches, using voluminous amounts of barley and hops. The process starts early in the morning and ends late into the night. We hope this rare brew reignites your spirit for another trip around the sun.

“the ancients called it ‘food for the gods’“ The Popol Vuh, the sacred book of the Maya, unfolds a complex web of mystery around a beverage known as xocoatl (ch-co-atle). At Southern Tier, we’re not surprised that hieroglyphs of the ancient Maya depict chocolate being poured for rulers and gods. Even through the many voyages of Columbus, the mystical bean remained nothing more than a strange currency of the native peoples. Moving through centuries, the circular journey of cacao has been realized in our brewing house, encompassing the complexity of the darkest, bitter-sweet candy together with the original frothy cold beverage of the ancient Maya to bring to you our Blackwater Series Choklat Stout. We have combined the finest ingredients to tempt your senses & renew the power & interrelation of history in every bottle.

Choklat Oranj is the latest offering from Southern Tier’s Blackwater Series. An Imperial Stout brewed with chocolate and orange peel.

The scent of our brewery on brew days is irresistible. Akin to the morning’s first brewed batch of perfectly roasted coffee, the aromas envelope you and cause the corners of your lips to curl into the slightest unconscious smile.

We rely on age-old tools in the brewery despite being surrounded by high technology. As a sort of compass, we use the six pointed brewer’s star to help navigate uncharted brews. The cardinal points of water, malt, grain, yeast, hops and a brewer make the baseline. From there anything goes. Sometimes the journey is as important as the destination. You’ll notice a slight bitterness in Compass derived from our use of rose hips accentuated by high effervescence. Drink it cold from a fluted or tulip glass. And by all means, avoid sea serpents.

“a stout of great contention” We are not the harbingers of truth as some may suggest but it may indeed be argued that our brewing philosophy is tantamount to a dessert with a bellicose past. How, you may ask, would a brewery determine a likeness to hard-coated custard? Our response is simple; it’s all in the power of history, and of course, the extra finesse needed to top off a contentious treat with definition. By comprehending the labyrinthine movement of time, one would not think it strange to trace the errant path of an ordinary object such as a cream dessert only to discover that it has been the cause of cultural disputes since the middle ages. Flemish brewers add sugar as an adjunct during fermentation. We add "American sugar" in the form of real maple syrup made by our neighbors at Big Tree Maple, a farm literally across the road from us. Three thousand feet above sea level in the misty mountains of Jamaica, some of the worlds finest Arabica beans are hand picked on their way to becoming Blue Mountain Coffee. Halfway around the world, plump spring barley grows to maturity in the loamy soil of North America while aromatic hops are cutivated to exacting standards. Here in our kettles, these three special ingredients are blended to create a heady mixture of sweet sugar, dark roast, and complex flavor. Please enjoy this brew in moderation.

St. Nicholas, aka Santa Claus, is a magical figure, the bringer of gifts and an icon of holiday spirit. Forgotten by most is his evil side kick and enforcer of ‘the list’. European tradition says while St. Nick is busy delivering presents to good little boys and girls, Krampus hands out punishments to the bad. A fanged, goat-horned bully, the Christmas Devil uses sticks and chains to beat the naughty children. Dark malts and aromatic hops create the diabolical spirit of this brew. It is finished with lager yeast and aged cold for no less than 30 days. This Imperial Helles Lager will warm even the darkest hearts. This season, replace the cookies with a bottle of Krampus. After over a year of prototyping R&D batches of Nu Skool IPA, this final version is one special beer. It’s an approachable, well-balanced IPA with slight malty sweetness that’s brimming with tropical, fruity, spicy, piney & citrus character. To contrast our IPA (brewed since 2002), which most closely resembles a traditional English IPA in malt & hop bills, we wanted to brew an IPA in a new way. Like craft brewers, hop farmers have come a long way. This beer showcases just how far we’ve come with alluring aromas & explosive flavors using only new American & experimental hops. There’s no need to add anything else. It’s time to graduate to the next level of hop flavors with Nu Skool IPA. HOP PROCESS: We used 3.5 lbs. of “new school” varieties of hops per barrel of beer. We load our hopback to the brim with Mosaic hops for a big tropical fruit character. A nice whirlpool dose of experimental hop #07270 gives the beer a flavorful, resinous character. We then dry hop this beer on two separate days with a large amount of Mosaic hops in our hop cannon & Simcoe + Equinox two days later.

With the onset of winter, the brewer’s mind turns to providing warmth. For our winter seasonal, Southern Tier offers Old Man Winter Ale, a rich and complex amalgam of hops and barley that will put the feeling back in your toes and lift your spirits above the snow. Old Man Winter throws a deep and inviting hue with a thickness that clings to the glass and the warmth of an open flame. Because of its high alcohol content, Old Man Winter is a heady brew that encourages sipping and pondering its essential richness. Dessert Collaboration with Perrys Ice Cream

Plums are a diverse group of species, with somewhere between 19 & 40 varieties depending upon whom you ask. We’re using what we consider to be the best to brew with. the Italian plum has beautiful dark skin & the flesh is perfect for fermentation. Plum Noir’s mild sweetness is derived no necessarily from the many malts we use. A bit of plum flavor is present as well as earthy, toasted grains, & hints of caramel with mild coffee overtones.

Porter is our darkest beer, but not necessarily our strongest. It is widely held that the darker the beer the stronger the beer, but this is summarily false. The contribution of color comes directly from the color of malt that we use. Some malt is roasted to achieve dark color and coffee-like flavor, which in turn get transferred to the beer. Our Porter is richly complex with overtones of chocolate and espresso beans followed by a subtle flavor of hops. It’s a nourishing beer without being too sweet or filling.

Pumking is an ode to Púca, a creature of Celtic folklore, who is both feared and respected by those who believe in it. Púca is said to waylay travelers throughout the night, tossing them on its back, and providing them the ride of their lives, from which they return forever changed. Brewed in the spirit of All Hallows Eve, a time of the year when spirits can make contact with the physical world and when magic is most potent. Pour Pumking into a goblet and allow it’s alluring spirit to overflow. As spicy aromas present themselves, let it’s deep copper color entrance you as your journey into this mystical brew has just begun. As the first drops touch your tongue a magical spell will bewitch your taste buds making it difficult to escape the Pumking.

Southern Tier Salted Caramel takes a base imperial milk stout (brewed with lactose), Himalayan pink sea salt, and caramelized sugar, to mimic the flavor of the candy. Much like other beers in the Blackwater Series, this dessert beer finishes at 10% alcohol by volume.

From Greek heroes to Cold War spies and uprisings, Tangier has inspired thousands of legendary stories. It is written that before his battle with the giant Antaeus, Hercules rested in a nearby cave. But where myths end, our tale begins. Tangier is brewed as a Session India Pale Ale with spicy citrus aromas and stone fruit flavors. These flavors, with the addition of lightly roasted malts and brilliant hop bitterness, make Tangier a beverage as refreshing as it is exotic. The approachable 5.1% abv yields more time to enjoy the synergy between the tangerine peel and spicy, citrusy, Azacca hops. Enjoy Tangier in celebration of your epic adventure.

Tier de Garde is a Belgian Style India Pale Ale brewed with grapefruit peel. It is the third in our acclaimed Belgian Style Series. Tier de Garde is akin to a Belgian Tripel crossed with an American IPA. Deep copper in color with a thick, rocket white head and persistent lacing. It is noticeably hazy with yeast and sediment visible. Carefully pour it into your favorite glass. Citrusy, hoppy and spicy with some sweetness in the aroma, while being dry and effervescent on the tongue. The flavor is bitter and spicy, peppery and grapefruit zest is apparent. Also expect floral and apricot/pear notes.

Where the Helles Summer? is a classic German style lager. These beers originated in the 19th century as a response to Pilsener beers from Czech brewers.
