"2 varieties of hops & 3 types of malts" Milk stout, also called ‘cream’ or ‘sweet’ stout, is a stout containing lactose, a sugar derived from milk. Because lactose is unfermentable by beer yeast, it adds sweetness and body to the finished beer. Milk stouts have been claimed to be nutritious, and were marketed as such in the early 1900s with claims that would make the FDA wince. One ad read, “Ideal for nursing mothers, for the healthy, for the invalid, and for the worker.” Surely! Of course, we couldn’t stop at a traditional milk stout. Ours is a double, an addition to our 2X line, and at 7.5% abv is every bit as delicious as it sounds. To your health!

Espresso is a drink that is not for the faint of heart. Pulling a perfect shot is as much a science as it is an art form. Come to think of it, the same can be said for brewing beer. Of course, both coffee and beer have certain, shall we say ‘uplifting’ qualities. Combine the two is a natural progression. Our 2xStout is considered by many to be a perfect milk stout. We started with that in mind, and added espresso beans and lemon peels for a true Italian style pick-me-up. The result is a stout so black, so rich, so creamy, it’d be at home in a café along a cobblestone street in some neighborhood in Rome. Yet, it’s beer.

What is rye? Rye is a cereal grain historically grown in our region. It has been cultivated since the time of the early settlers due to the scrappy and hearty ability to withstand harsh climates and poor growing conditions. Did you know George Washington grew rye and used it to ferment whiskey? Were pretty sure that is a fact. You will notice the distinct notes of rye, a slightly spicy and grainy aroma not lost in the shuffle of hops and the four other malted grains we use in this fine seasonal addition to our 2X line.

This high-gravity Wheat Ale is brewed with blood orange juice, grapefruit & tangerine peels. This special ale is brewed with 35% Wheat & 3 types of hops. We made this one obviously refreshing. It features Tropical citrus and grapefruit aromas from Mosaic hops along with the addition of over 4 & a half pounds per barrel of grapefruit & tangerine peels. And to get extra juicy, we ferment with blood orange juice concentrate. Not overly bitter, this brew sits around 30 IBU and its nice citrus pith rounds out the bitterness. Residual sweetness helps accentuate the fruity character and masks the 8.5% ABV well. Enjoy straight up or served on the rocks with soda & wedge of fresh fruit. We’ve loved it with simple syrup & a shot of our favorite spirit

We rely on age-old tools in the brewery despite being surrounded by high technology. As a sort of compass, we use the six pointed brewer’s star to help navigate uncharted brews. The cardinal points of water, malt, grain, yeast, hops and a brewer make the baseline. From there anything goes. Sometimes the journey is as important as the destination. You’ll notice a slight bitterness in Compass derived from our use of rose hips accentuated by high effervescence. Drink it cold from a fluted or tulip glass. And by all means, avoid sea serpents.

“a stout of great contention” We are not the harbingers of truth as some may suggest but it may indeed be argued that our brewing philosophy is tantamount to a dessert with a bellicose past. How, you may ask, would a brewery determine a likeness to hard-coated custard? Our response is simple; it’s all in the power of history, and of course, the extra finesse needed to top off a contentious treat with definition. By comprehending the labyrinthine movement of time, one would not think it strange to trace the errant path of an ordinary object such as a cream dessert only to discover that it has been the cause of cultural disputes since the middle ages. European tradition says while St. Nick is busy delivering presents to good little boys and girls, Krampus hands out punishments to the bad. A fanged, goat-horned bully, the Christmas Devil uses sticks and chains to beat the naughty children. Dark malts and aromatic hops create the diabolical spirit of this brew. It is finished with lager yeast and aged cold for no less than 30 days. This Imperial Helles Lager will warm even the darkest hearts. This season, replace the cookies with a bottle of Krampus. After over a year of prototyping R&D batches of Nu Skool IPA, this final version is one special beer. It’s an approachable, well-balanced IPA with slight malty sweetness that’s brimming with tropical, fruity, spicy, piney & citrus character. To contrast our IPA (brewed since 2002), which most closely resembles a traditional English IPA in malt & hop bills, we wanted to brew an IPA in a new way. Like craft brewers, hop farmers have come a long way. This beer showcases just how far we’ve come with alluring aromas & explosive flavors using only new American & experimental hops. There’s no need to add anything else. It’s time to graduate to the next level of hop flavors with Nu Skool IPA. HOP PROCESS: We used 3.5 lbs. of “new school” varieties of hops per barrel of beer. We load our hopback to the brim with Mosaic hops for a big tropical fruit character. A nice whirlpool dose of experimental hop #07270 gives the beer a flavorful, resinous character. We then dry hop this beer on two separate days with a large amount of Mosaic hops in our hop cannon & Simcoe + Equinox two days later.

Plums are a diverse group of species, with somewhere between 19 & 40 varieties depending upon whom you ask. We’re using what we consider to be the best to brew with. the Italian plum has beautiful dark skin & the flesh is perfect for fermentation. Plum Noir’s mild sweetness is derived no necessarily from the many malts we use. A bit of plum flavor is present as well as earthy, toasted grains, & hints of caramel with mild coffee overtones.

Porter is our darkest beer, but not necessarily our strongest. It is widely held that the darker the beer the stronger the beer, but this is summarily false. The contribution of color comes directly from the color of malt that we use. Some malt is roasted to achieve dark color and coffee-like flavor, which in turn get transferred to the beer. Our Porter is richly complex with overtones of chocolate and espresso beans followed by a subtle flavor of hops. It’s a nourishing beer without being too sweet or filling.

Tier de Garde is a Belgian Style India Pale Ale brewed with grapefruit peel. It is the third in our acclaimed Belgian Style Series. Tier de Garde is akin to a Belgian Tripel crossed with an American IPA. Deep copper in color with a thick, rocket white head and persistent lacing. It is noticeably hazy with yeast and sediment visible. Carefully pour it into your favorite glass. Citrusy, hoppy and spicy with some sweetness in the aroma, while being dry and effervescent on the tongue. The flavor is bitter and spicy, peppery and grapefruit zest is apparent. Also expect floral and apricot/pear notes.
