Imperial Stout

Dark Hollow blends the miracle of two crafts–brewing and distillation–to create a work greater than the sum of its parts. An Imperial Stout has been aged in charred American oak bourbon barrels still dripping with uncut whiskey. For 100 days the young beer patiently breathes in and out of the wood, gaining complexity, character, and serious attitude. Can be enjoyed immediately, or five years later, when you dust off the last vintage bottle from your cellar to share with good company. Available as long as each batch lasts, November-April.

Imperial Stout
10.6% ABV
We doubled our certain specialty malts in this brew and tripled the aging time to ensure that we can justifiably use the term “Reserve.” Barrel-aging this spectacular Imperial Stout for 12-months created a harmony of complex flavor and aroma. We krausened and bottled only two thousand 750ml cork and caged-style bottles and have them conditioning in our cellar.

Imperial Stout
10% ABV70 IBU
This liquid is the alpha and the omega; you need nothing else. Our flagship imperial stout has been aged in charred American oak bourbon barrels with African cacao nibs and locally roasted coffee. Dark, bitter cocoa blends with sweet malt; robust coffee mellows in the presence of oak-imparted vanilla and bourbon flavors. Enjoy this one at the end of a fine meal with good friends.

Double IPA

Earth: A powerful Double India Pale Ale, brewed from the same mash as its sister beer, Moon. Earth is created by the melding of pale, wheat and light crystal malts, with a heavy hand of Citra, Falconer’s Flight, Cascade, Amarillo and Jarrylo hops. The final accent is from the unique and excessive Jarrylo dry-hoping, though we’ve left a few lively flakes of Amarillo whole hops in the final filtered version to complement the Jarrylo hops and malt backbone. If you drink Earth with its little sister beer, Moon, please try this bigger beer second! 8.5% abv, 70 IBUs, 4.1° SRM.

Evan AlmightyBlue Mountain

Alt
6.6% ABV30 IBU
This beer is in the style of a Dusseldorf "sticke altbier" - originating from the North Rhine-Westphalia area of Germany. It is the cousin to Cologne’s Kolschbier, in that they are both termed "obergärige" - top fermented - beers brewed in the alt ("old" or pre-lager beer) style. Alts range from deep gold to dark copper in color and have a firm, hoppy dryness to back up their malty undertones. We’ve created our alt on the deep gold color end of the spectrum, but in the "sticke" (secret) category, that signifies a higher-gravity beer that, in Dusseldorf, is brewed as a reward for local customers and is often not listed on the menu (thus the "secret" part). Evan Altmighty was brewed with Pilsner, Munich, and Caramel Munich malts and hopped with German Hallertau Tradition hops. The same cologne-based strain of ale yeast for fermentation provides light fruit and bready notes and aids in the prolonged cold aging of this ale often treated like a lager after primary fermentation.

The dark splendor of this roasty ale belies the exceptional light body and quick, dry finish. Served from the nitrogen tap for extra smoothness.

Maibock
11.5% ABV30 IBU
The biggest beer we’ve ever brewed at Blue Mountain, coming in at almost 12 percent alcohol by volume. But it’s also one of the lightest-colored brews we’ve ever created! Brewed solely with Pilsner and Vienna malts, and we used the same amount of barley it would take to make 1000 gallons and packed into just 500 gallons worth of the smoothest, fullest-bodied, strongest winter brew you’ve ever had. This lager defies most standard beer categorization (Germans would put it in the Doppelbock category), but we’re calling it a blonde Triplebock. The name says it all... It won’t take many of these and a long winter’s nap will be all you’re capable of doing.

Marsedon - Belgian-style Quadrupel Ale: A monster of a strong dark ale, the quadrupel style is associated with Trappist breweries and boasts the richest flavors of just about any beer in the world. This special collaboration between Blue Mountain Brewery and Devils Backbone Brewing Co. honors the style with yeast from the Trappist Westmalle Abbey brewery, a range of specialty malts from Belgium, Germany and England, and hops from Germany, England and Slovenia. Dominated by a palate of dark fruits and light, spicy yeast notes, this ale is a deep mahogany color and is noticeably powerful, weighing in at 11.2% alcohol by volume. The Devils Backbone version was brewed with chocolate.

Pale Lager
4.5% ABV
Moon: A very light and subtle Session India Pale Lager, brewed from the same mash as its sister beer, Earth. Middle-late and last runnings of a pale, wheat and light crystal malt grist combine with a light hand of Citra, Falconer’s Flight, Cascade, Amarillo and Jarrylo hops. The final accent is from the unique Jarrylo dry-hoping, though we’ve left a few lively flakes of Amarillo whole hops in the final filtered version to complement the Jarrylo hops and light malt backbone. Unlike a normal India Pale Lager (IPL), this Session version lacks the overt hop bitterness and focuses in on a soft malt flavor and dominant hop flavor and aroma. If you drink Moon with its bigger sister beer, Earth, please try this very subtle beer first! 4.6% abv, 32 IBUs, 2.7° SRM.

Pale Wheat
5% ABV17 IBU
Judged the best American-style wheat beer in the country at the Great American Beer Festival in Denver, Colorado in 2010. Our new end-of-summer ale served unfiltered is the perfect way to send off the dry, hot summer of 2010. American wheat beers have all the body and crispness of their forbears - The German weisse beers - with a more subdued yeast character that lacks the banana and clove flavors of their Bavarian counterparts. Basically, they are drinkable as all get-out. Pilsener, Vienna and Wheat malts are balanced with German Hallertau hops and fermented with a neutral top-fermenting yeast.
