A few years ago, Sam also ordered a glass of his favorite red wine and poured a little into each pint of 60 Minute. Our fruit beer for hopheads! Aprihop is an American IPA brewed with Pilsner and Crystal malts. It's massively hopped -- in the continuous fashion, of course! -- and the flavor is complemented by the addition of apricots. After fermentation, the beer is dry hopped with irresponsible amounts of Amarillo hops. The beer has a hoppy aroma, with the apricots playing a supporting role. The flavor is rich with late hop flavors, and its bitterness is tempered by just the right amount of malt sweetness and fruity undertones from the apricots.

To celebrate the band’s independent spirit and the 20th anniversary of the classic album Bee Thousand, Dogfish Head has brewed the bracing but highly quaffable BEER Thousand. This imperial lager includes 10 grains and 10 hop varieties and clocks in at 10% ABV. 10x10x10 = BEER Thousand. No sipper, BEER Thousand looks like a light lager and has much of the light lager recipe DNA but it is amplified like a barleywine. Fleeting fruit notes in the aroma give way to a sweet and malty flavor and a clean, warm finish. It goes down perfectly between barrages of low-fi 90-second jams. "I can't believe it's been 20 years," says GBV frontman Robert Pollard. "But I'll drink to that." This beer is based on a beverage that may have been enjoyed by the Etruscans of Ancient Italy around 800 BC. For this one Sam traveled to Italy with Dr. Pat McGovern where they met up with Teo and Leo (Sam’s buddies from Baladin Brewery and Birra Del Borgo respectively) and researched ingredients from various Etruscan dig sites. The result of their research is a strong ale containing an Italian heirloom grain called Cappelli Senatore, along with pomegranate juice, raisins, and hazelnut flour, together with 3 types of honey: chestnut, wildflower, and clover. The brew was then spiced with several hop flowers, Gentian root and tree resin (think Myrrh) in the kettle. To simulate fermentation in a bronze vessel (which possibly would have been what the Etruscans used), we actually tied a bronze plate inside our modern stainless fermenter which was suspended in the wort as it fermented. The aroma is dominated by pomegranate and spice from the yeast. The flavor is an intriguing interplay between the tangy pomegranate fruit and nuttiness from the hazelnut flower. One can definitely envision sipping this unique brew while relaxing on the Mediterranean coast. Versions of this brew will also be made at Baladin and Birra Del Borgo with the same ingredients but varying processes.

Black & Blue is a Belgian-style golden ale fermented with blackberries and blueberries. Because we dose Black & Blue with real berries -- rather than artificial flavoring -- the fruit comes through in the flavor, not just the aroma. The pureed berries are added as the beer leaves the brewhouse. In fermentation, the yeast -- the same one we use in Red & White and Pangaea -- feeds on sugars from the barley and the berries, giving Black & Blue a unique complexity and a high ABV.

For Burton Baton, we brew two "threads," or batches, of beer: an English-style old ale and an imperial IPA. After fementating the beers separately in our stainless tanks, they're transferred and blended together in one of our large oak tanks. Burton Baton sits on the wood for about a month.

Let's travel back in time again for another Dogfish Head Ancient Ale (Midas Touch was our first foray and Theobroma our most recent). Our destination is 9,000 years ago, in Northern China! Preserved pottery jars found in the Neolithic villiage of Jiahu, in Henan province, have revealed that a mixed fermented beverage of rice, honey and fruit was being produced that long ago, right around the same time that barley beer and grape wine were beginning to be made in the Middle East!

Pour this over pancakes. Vast in character, luscious and complex, Immort Ale was born at our brewpub in 1995 and made its way into bottles in 1997. For this beer, we use maple syrup from Red Brook Farm -- Sam's family farm in Western Massachusetts, peat-smoked barley, juniper berries and vanilla. Immort is fermented with a blend of English and Belgian yeasts, then aged in the big oak tanks at the brewery.

Forget about the car companies, this is the original hybrid. A cross between a Scotch Ale, an India Pale Ale and an American Brown, Indian Brown Ale is well-hopped and malty at the same time (It's magical!). The beer has characteristics of each style that inspired it: the color of an American Brown, the caramel notes of a Scotch Ale, and the hopping regimen of an India Pale Ale. We dry-hop the Indian Brown Ale in a similar fashion to our 60 Minute IPA and 90 Minute IPA. This beer is brewed with Aromatic barley and organic brown sugar.

This saison-esque science project gets complexity and fermentable sugars from two unique wine grapes sourced with our friends at Alexandria Nicole Cellars in Prosser, Wash. The first addition is unfermented juice, known as must, from viognier grapes that have been infected with a benevolent fungus called botrytis. This noble rot reduces the water content in the grapes while magnifying their sweetness and complexity. The second is pinot gris must intensified by a process called dropping fruit, where large clusters of grapes are clipped to amplify the quality of those left behind.

Noble Rot is the head-on collision of the beer world and the wine world ... and now we've aged it on oak ... for a whole year! This saison-esque science project gets complexity and fermentable sugars from the addition of two unique white wine grapes, sourced with our friends at Alexandria Nicole Cellars in Prosser, Washington. The concept for this beer came from an old cellerman's manual Sam came across (for more on that, check out the video below). At about 15% ABV, this beer is a great candidate for aging. Over time, the beer dries out and the pit fruit flavors come forward and the hops recede. Our recommendation? Grab a few bottles when you find it -- enjoy one now, and age the others for a bit. An unfiltered, unfettered, unprecedented brown ale aged in handmade wooden brewing vessels. The caramel and vanilla complexity unique to this beer comes from the exotic Paraguayan Palo Santo wood from which these tanks were crafted. Palo Santo means "holy tree," and its wood has been used in South American wine-making communities. This highly roasty and malty brown ale clocks in at 12% abv. A huge hit at our Rehoboth Beach brewpub when first released in November 2006, Palo went into full production at the end of 2007.

Named after the head-to-toe red and black wool outfits that woodsmen wear in Pennsylvania, New England and beyond, the 4.5% ABV rye pale ale will debut as draft-only at Dogfish Head's Analog-A-Go-Go music and beer festival on June 13. After the festival, Pennsylvania Tuxedo will be initially available on draft at Dogfish Head's Rehoboth Beach, Del., brewpub. The beer is a Tamarillo & Pohutakawa Smoked Porter - A collaboration, a Festive brew and the world's first tree tomato beer. A sorta-Porter fermented with New Zealand grown Tamarillos, which were smoked using wood chips from the sacred Pohutakawa tree (also know as the NZ Christmas tree). Portamarillo was brewed with five types of malt (pale ale, crystal, chocolate, black, and roast barley), New Zealand Southern Cross hops, New Zealand Tamarillo fruits smoked over native Pohutukawa wood.

Sam and Dan the Automator of Deltron 3030 teamed up to create Positive Contact, based on Dan's favorite ingredients and Dogfish Head's innovative brewing practices. Named after a key track on the first album, Positive Contact is a 9% ABV hybrid of beer and cider brewed with wood-pressed Fuji apples, roasted farro, a handful of cayenne peppers and a late dose of fresh cilantro. This sweet-and-sour Belgian-ish brew is a light straw color with fruity, cider-like notes. The cayenne and alcohol give it a warming finish.

The vivid rose hue of this imperial Pale Ale comes from a combination of Munich and Caramel malts and a touch of red rice from Louisiana, birthplace of musician and collaborator Julianna Barwick (read all about that collaboration here!). Julianna, who builds ecstatic choirs by looping and layering her voice, helped choose the ingredients for Rosabi and visited coastal Delaware to brew a test batch. Citrusy Simcoe and Centennial feed Julianna’s love of hops, and the star of the show is her go-to ingredient: wasabi. What’s hoppy? … Wasabi. The Japanese root adds bittering and herbal notes similar to hops, with its subtle heat creeping in after the kick of carbonation.

This is our original and most approachable beer. We got our start back in 1995 brewing this very beer on our teeny, tiny brewing system at Dogfish Head Brewing & Eats in Rehoboth Beach, Del. Brewed with a premium barley and northwestern Williamette and Columbus hops, Shelter Pale Ale has a fine malt backbone and a slightly nutty flavor. It's a versatile and quaffable beer. We named this beer Shelter Pale Ale because we think of a shelter as being a place you come home to. It just made sense for this Dogfish original.

Theobroma is a celebration of chocolate, the food of the gods. This Ancient Ale is based on chemical analysis of pottery fragments found in Honduras that revealed the earliest known alcoholic chocolate drink used by early civilizations to toast special occasions. The discovery of this beverage pushed back the earliest use of cocoa for human consumption more than 500 years to 1,200 B.C. As per the analysis, Dogfish Head's Theobroma (translated into "food of the gods") is brewed with Aztec cocoa powder and cocoa nibs (from our friends at Askinosie Chocolate), honey, chilies and annatto (fragrant tree seeds).
